Vermicelli Upma: Healthy And Light Breakfast Option

A healthy breakfast dish made with thin vermicelli or asian noodles and other vegetables. This is prepared very similar to the traditional rava upma or semolina upma by just replacing it with vermicelli or semiya. It is a common south indan cuisine dish which can be easily extended to other variations like pulav, khichdi and bath recipes.

Ingredients

1 cup vermicelli / semiya Water to cook ½ tsp salt Cooking oil 1 tsp mustard ½ tsp urad dal 1 tsp chana dal 1 dried red chilli Few curry leaves Handful peanuts 1 inch ginger, finely chopped

Ingredients

2 green chilli, slit 2 tbsp onion, finely chopped ½ tsp turmeric / haldi 2 tbsp peas / matar 2 tbsp carrot, finely chopped ½ tsp salt 2 tbsp capsicum, finely chopped 2 tbsp beans, finely chopped ½ lemon 2 tbsp coriander, finely chopped

Step 1

In a kadai, heat oil and splutter mustard, urad dal, chana dal, dried red chilli and few curry leaves. Also add handful of peanuts and roast till they turn crunchy on low flame. Now add ginger and 2 green chillis. Saute well.

Step 2

Add onion and saute slightly. Also add peas, carrot, capsicum and beans. Saute for a minute and add ½ tsp turmeric and ½ tsp salt. Cover and cook for 2 minutes or till vegetables turn soft.

Step 3

Add in cooked semiya and mix gently. Do not over mix as semiya will get mashed. Now add coriander and ½ lemon. Mix well. Serve semiya upma with hot masala chai for morning breakfast.
