Vegetarian Indian One Pot Dishes For Lunch

Indian cuisine has  lot of variety for vegetarians, including several delicious one-pot meals.Let us look at some of them, which can easily be made for lunch.

Coconut Rice

This dish, primarily cooked in the Southern part of India is cooked in coconut oil and sauteed with coconut flakes. It is best enjoyed with crispy banana chips.

Rajma Pulao

Everyone loves rajma chawal, but this underrated one-pot dish is easier to make and absolutely delicious. It is an entire meal in itself.

Lemon Rice

This spicy, tangy, flavourful rice is not only great for health because of the Vitamin C from lemon, it is filling too! Eat it with curd or chutney.

A great one-pot dish especially eaten during fasting, sabudana khichdi is very satiating and at the same time healthy. It tastes the best with raita.
