1 cup rice 1/2 cup moong dal 1 large onion 2 cloves garlic 1-inch ginger 1 teaspoon cumin seeds 1 teaspoon coriander powder 1/2 teaspoon red chilli powder 1/4 teaspoon turmeric powder Salt to taste 3 cups water 1 cup mixed vegetables (carrots, peas, cauliflower, etc.)
Heat oil, then add cumin seeds, onion, garlic, ginger, coriander powder, red chilli powder, and turmeric powder.
Add the mixed vegetables and washed rice and dal to the pan.
Reduce heat to low, cover, and simmer for 15-20 minutes or until the rice and dal are cooked and the water is absorbed.
Fluff the khichdi with a fork and serve hot.
