Vegetable Khichdi Recipe: Easy And Delicious Comfort Food To Try

Want to eat something light to give your stomach a break? Why not make easy and delicious khichdi, which gives your stomach a much-needed recess and makes you cosy? Khichdi is a true soul food which gives you warmth when you don’t feel like eating anything. Keep reading!

Ingredients

1 cup rice 1/2 cup moong dal 1 large onion 2 cloves garlic 1-inch ginger 1 teaspoon cumin seeds 1 teaspoon coriander powder 1/2 teaspoon red chilli powder 1/4 teaspoon turmeric powder Salt to taste    3 cups water 1 cup mixed vegetables (carrots, peas, cauliflower, etc.)

Step 1

Heat oil, then add cumin seeds, onion, garlic, ginger, coriander powder, red chilli powder, and turmeric powder. 

Step 2

Add the mixed vegetables and washed rice and dal to the pan. 

Step 3

Reduce heat to low, cover, and simmer for 15-20 minutes or until the rice and dal are cooked and the water is absorbed.

Step 4

Fluff the khichdi with a fork and serve hot.
