Vegetable idli is a healthy and tasty twist on the classic South Indian breakfast dish. With vegetables packed inside, it not only tastes better but also gives a good dose of fibre and vitamins, making it a balanced meal. Here is how to make vegetable idli:
2 cups Idli batter ¼ cup grated carrot 2 tablespoons green peas 2 tablespoons chopped capsicum 2 tablespoons chopped beans. 1 sprig of chopped curry leaves Coriander leaves Salt to taste Oil
In a large bowl, add the idli batter. If using store-bought batter, check for salt and add more if needed.
Add the grated carrot, green peas, chopped capsicum, and beans to the batter, and mix it well.
Mix in the chopped curry leaves and coriander, then grease the idly plates with oil.
Fill each idli mould with the batter, then cook the idlis for 12–15 minutes on medium heat or until done.
Let the idlis cool slightly, then remove them from the moulds. Serve hot with coconut chutney or sambar.
