The traditional shahi tukda can easily be made with plant-based ingredients. The popular dessert is typically made with fried bread slices soaked in a rich and fragrant saffron-infused milk, topped with a layer of creamy rabri. Here's a vegan version of Shahi Tukda for you which only has plant-based products

2 cups almond milk 1 cup sugar 1/4 cup cashews 1/4 cup almonds 1/4 cup pistachios 1/2 teaspoon cardamom A pinch of saffron strands 4 slices of vegan bread Vegan ghee or coconut oil 1/4 cup maple syrup

In a saucepan, bring the almond milk to a gentle simmer. Add sugar, chopped cashews, chopped almonds, chopped pistachios, cardamom powder, and saffron strands.

Simmer on low heat, stirring occasionally, until the mixture thickens to a rabri-like consistency. This may take around 20-25 minutes.

Trim the edges of the bread slices and cut them into triangles or squares. Heat vegan ghee or coconut oil in a pan over medium heat.

Fry the bread slices until they are golden brown and crispy on both sides. Place them on paper towels to absorb excess oil.

Dip the fried bread slices into the prepared vegan rabri, ensuring they are well-coated. Place the rabri-soaked bread slices on a serving plate.

Drizzle maple syrup or agave nectar over the top for additional sweetness. Garnish with chopped pistachios and almonds.
