1 block extra-firm tofu 1/2 cup coconut milk 1/4 cup powdered sugar 1/4 teaspoon cardamom powder 1/4 teaspoon saffron strands 1 tablespoon ghee (clarified butter) Chopped pistachios or almonds for garnish
In a blender, combine crumbled tofu, coconut milk, powdered sugar, cardamom powder, and saffron-infused milk. Blend until smooth.
Pour the blended mixture into the pan and cook, stirring continuously, until it thickens and becomes slightly sticky.
Let the sandesh set and cool completely in the refrigerator.
Garnish with chopped pistachios or almonds before serving.
