Indulge in the velvety goodness of this vegan hummus, combining the smoky sweetness of roasted red peppers with chickpeas, tahini, and zesty flavours.
1 can chickpeas, drained and rinsed 1 large red bell pepper 2 tbsp tahini 2 tbsp lemon juice 2 cloves garlic, minced 1 tbsp olive oil 1/2 tsp cumin Salt and pepper to taste Water ( accordingly)
Preheat the oven to 200°C. Cut the red bell pepper in half lengthwise, remove the seeds. And roast for 25 min.
Once cooled, peel off the skin from the roasted red pepper and roughly chop it.
Now Blend the chickpeas, roasted red pepper, tahini, lemon juice, minced garlic, olive oil, cumin, salt, and pepper.
Blend the mixture until smooth and creamy. If needed, add a little water gradually.
Adjust the seasonings accordingly. Transfer the hummus to a serving bowl and garnish with olive oil.
