Quinoa is a superfood that’s loaded with fibre and protein; no wonder it boasts various health benefits, including protecting the heart and aiding digestion. Combine quinoa with fresh vegetables and herbs to craft a quick and nutritious salad dish. Read on to find out how.
3 cups of water 1.5 cups of washed quinoa 1 cup halved cherry tomatoes ½ cup chopped red onions ¼ cup olive oil ¼ cup lemon juice 4 minced garlic cloves 2 sliced mini cucumbers 1 chopped red pepper 6 tablespoons of minced parsley 6 tablespoons of minced mint 1 tablespoon grated lemon zest 1.5 teaspoons of salt
Toast the quinoa in a pan over medium heat for about 3–5 minutes. Add water to the mixture, slowly bringing it to a boil.
Let the mixture simmer for about 15 minutes until the liquid has completely dissolved. Move the concoction to a bowl and allow it to cool.
In a separate bowl, whisk oil, lemon zest, garlic, parsley, mint, lemon juice, and salt. This is the salad dressing.
Add vegetables to the quinoa mixture, and pour the dressing over the salad. Your healthy, homemade vegan quinoa salad is ready. Enjoy!
