Vegan Mushroom Noodles - A Perfect Weekend Dinner Idea

This vegan recipe is an excellent choice for individuals eating a plant-based diet because it is delicious and filling.

Ingredients

1 packet dried noodles (such as spaghetti or soba) 2 tbsp. vegetable oil 1 onion, chopped 3 garlic cloves, minced 8 oz. mushrooms, sliced 2 tbsp. soy sauce 2 tbsp. hoisin sauce 1 tbsp. rice vinegar 1 tbsp. brown sugar 1 tsp. sesame oil Salt and pepper, to taste Green onions, chopped (for garnish)

Step 1

In a pan, prepare the noodles. Drain and reserve. Warm up the vegetable oil in a pan over medium-high heat

Step 2

Sauté the chopped onion and minced garlic after adding them to the pan. Stir in the sliced mushrooms and cook.

Step 3

Combine the rice vinegar, soy sauce, hoisin sauce, brown sugar, and sesame oil in a small bowl.

Step 4

After adding the sauce, swirl the mushroom mixture in the pan to thoroughly coat it.

Step 5

Now Add the cooked noodles to the pan and stir until they are thoroughly covered in sauce.

Step 6

Add salt and pepper, if desired. Add chopped green onions as a garnish. Serve hot and enjoy!
