Meatballs are a staple in several global dishes, such as spaghetti and meatballs, and meatball subs. However, not everybody can enjoy these dishes as many people choose not to consume meat. For such people, here’s an alternate vegan meatballs recipe that’s both tasty as well as healthy.
2 cups canned chickpeas ½ cup rolled oats 2.5 tablespoon chia seeds 1.5 tablespoon tomato paste 3 tablespoon chopped basil ½ tablespoon fennel seeds ¼ tablespoon red pepper flakes 6 tablespoon water 1 minced garlic clove Black pepper Kosher salt
Preheat the oven to 425 degrees and line a baking sheet with aluminum foil; grease the pan with cooking spray.
After the chickpeas have been drained, blend them thoroughly till they’re completely fine and crumbly.
In a separate bowl, mix chia seeds and water; stir gently for about 5 minutes or till the concoction melds and forms into a dense paste.
Add the chia concoction plus oats, tomato paste, basil, garlic, fennel seeds, and red pepper flakes into the blender and mix till they’re properly melded. Add salt and pepper for seasoning.
Shape the mixture into balls and bake them for about 10 minutes till they’re golden and crispy. Add meatballs to your favourite pasta or sandwich and enjoy!
