Extremely simple to put together, this Marouli (meaning lettuce in Greek) salad, has only a handful of ingredients and is lush with herbs and good fats.
1 big head iceberg lettuce 3 spring onions, chopped 1 small bunch dill, chopped 200 grams vegan feta 3 tablespoons olive oil 2 teaspoons dried oregano 3 cloves garlic, minced Juice of one lemon 1 tablespoon white wine vinegar Salt and pepper to taste
Shred the lettuce into thin ribbons and add to a large salad bowl along with the spring onions and chopped dill.
Mix together the garlic, oregano, lemon juice, vinegar and olive oil. Season with salt and pepper.
Crumble the feta into the lettuce mix and add a generous drizzle of the dressing.
Mix well using tongs or wooden spoons. Serve immediately, topped with more chopped dill and spring onions.
