Creamy and deceptively simple to make, this vegan spin on the classic pina colada uses juicy, ripe mangoes instead of pineapple chunks. Enjoy this non-alcoholic, dairy-free version as it is or spike it with some white rum to have some fun!
1 cup mango chunks, frozen ½ cup coconut milk ½ cup pineapple juice 1 tablespoon maple syrup ¼ cup coconut cream Juice of 1 lemon 1 cup ice cubes Mint leaves, for garnish
Combine all the ingredients in a blender before grinding to a smooth, thick mixture.
Transfer into serving glasses and garnish with fresh mint leaves. Serve chilled.
