Enjoy the rich, velvety flavour of a classic Fettuccine Alfredo without the dairy! This vegan variation of the popular pasta dish will leave you speechless.
250 grams fettuccine noodles 1 cup raw soaked cashews 1 cup vegetable broth 3 tbsp nutritional yeast 2 cloves garlic minced 2 tbsp lemon juice 2 tbsp olive oil Salt and pepper Fresh parsley
Cook the fettuccine noodles according to the package instructions. Drain and set aside.
In a blender, add the soaked cashews, vegetable broth, nutritional yeast, minced garlic, lemon juice, olive oil, salt, and pepper.
Blend and smoothen it down. In a large pan, heat the sauce. Stir occasionally. Add the cooked fettuccine noodles toss gently.
Cook for an additional 2-3 minutes. Now serve the Vegan Fettuccine Alfredo immediately. Garnish with fresh parsley, if desired.
