The plant-based equivalent of the tuna sandwich, the chickpeas sandwich is a protein-packed healthy snack that works for children and adults, alike.

1 cup cooked chickpeas 4-5 tablespoons olive oil 1 teaspoon garlic powder ½ onion, chopped ¼ cup chopped coriander 2 teaspoons Dijon mustard 3 tablespoons vegan mayonnaise 2 slices tomato 1 lettuce leaf 2 slices whole wheat bread, toasted Salt and pepper, to taste

Combine the chickpeas in a bowl along with the olive oil, garlic powder, onion, coriander, mustard and mayonnaise.

Use a fork to mash the chickpeas gently before seasoning with salt and pepper; and making a coarse mixture, allowing flavours to combine.

Transfer some of the chickpeas mixture to one slice of toasted bread.

Place the lettuce leaf and sliced tomato on the second slice and flip over the chickpeas-laden bread.

Slice into halves and serve at room temperature.
