If you eat non-vegetarian food but choose to go meat-free for a while, you should try a vegan chicken breast recipe to satisfy your cravings. It is flavourful, and nutritious, and helps you take your cooking skills up a notch.
For Cutlets 4 tbsp nutritional yeast 1.5 cups tofu 1 tsp garlic powder, sea salt 1.5 cups wheat 4 tsp onion powder For Piccata Sauce 1 cup dry white wine ½ cup vegan butter ¼ cup parsley 5 garlic cloves ½ lemon 2 tbsp brine solution
For Coating 2 tsp onion powder A pinch of salt 3 tbsp maida ¾ cups cashew milk Oil for frying 1 tsp garlic powder 2.5-3 cups bread crumbs 1 tsp red chilli powder
Combine all the ingredients for cutlets in a food process until you have a thick and smooth paste.
Shape the dough-like mixture into 5-6 cutlets that look like chicken breasts. Steam these cutlets.
Prepare the piccata sauce with the mentioned ingredients. Its consistency should be thick.
Prepare the batter in another bowl and keep bread crumbs in a quarter plate.
Dip vegan chicken breasts in the batter, coat with bread crumbs, and deep-fry until crispy.
Serve vegan chicken breasts hot on the bed of the piccata sauce.
