Vegan Brown Rice Pudding Specially For You

Vegan Kheer is Indian pudding made by boiling plant based milk with brown rice topped with amazing dates, almonds and pistachios.

Ingredients

3 cups almond  milk 1 cup dry brown rice ¼ cup chopped dates ¼ cup sugarcane or  maple syrup 2 pinches saffron 1 tablespoon raisins 1 tablespoon  almonds 1 tablespoon pistachios 1 teaspoon cardamom Saffron

Step 1

In a large saucepan on low heat boil milk, rice, dates, sugar, and 1 cup water. Stir until the rice is cooked. In a bowl soak a few saffron strands with hot water for around 15min.

Step 2

Add saffron with soaking liquid, raisins, almonds, pistachios, cardamom, and ½ cup water to cooked rice.

Step 3

Cook 10 to 20 minutes more or until rice is creamy, stirring occasionally until you get the desired consistency.

Step 4

Top servings with saffron, sliced almonds, pistachios or desired toppings.
