Vegan Broccoli Soup: A Comforting Delight For Winter Evenings

This warm and comforting broccoli soup is very easy to prepare, and you can enjoy it at any time of the day.

Ingredients

1⅔ pounds broccoli (chopped into small florets) 3 potatoes (chopped) 1 teaspoon black pepper 5 cups vegetable stock

Step 1

In a large pot boil the potatoes in the vegetable stock for 5 minutes on high heat.

Step 2

Turn down the heat to medium and add the broccoli and black pepper and cook for another 10 minutes.

Remove from the stove and allow the pot to sit for 5 minutes.

Then pour all the contents into a blender and blend until smooth. Enjoy warm.
