This warm and comforting winter delight is a gift from the Tibetan cuisine. Here is a vegetarian version of thukpa you can try at home.

1 packet noodles, 1/4 cup beans, 1/2 cup chopped cabbage, 1/2 cup chopped onion, 1/2 cup spring onion, 4 cups vegetable broth, 2 tsp oil, 2 tbsp sweet chilli sauce, 1/2 tbsp chilli sauce, 2 tsp soya sauce, garam masala to taste, black pepper, salt to taste, 4 cloves, 4 garlic, 1/4 cup chopped carrot

Heat oil in a skillet, add the chopped onion and garlic. Once the onion turns brown, add the other chopped veggies along with salt. Mix well.

Now add the seasonings and mix again. Add vegetable broth and simmer for 4-5 minutes.

Add cilantro and simmer again for 4 to 5 minutes. Now, add the boiled noodles and cumin powder.

Mix them well and allow it to simmer for one minute. Serve hot.
