A tasty and flavoured dry curry made with a combination of vegetables in a unique street style tomato sauce. It is basically an indo chinese street cuisine curry that has a strong influence on chinese stir-frying technique with a hint of indian spices. It is generally served as a side to your choice of roti or naan and can also be served with dal rice combo meal. Here's the recipe for Veg Jalfrezi.

For stir-frying: 1 tbsp butter ½ onion, petals 10 beans, chopped ½ carrot, chopped ½ tomato, sliced & deseed 3 tbsp peas 5 baby corn, chopped ½ tsp salt ½ yellow capsicum, sliced ½ green capsicum, sliced ½ red capsicum, sliced

For sabzi: 2 tbsp oil 1 tsp cumin 1 tsp kasuri methi 3 cloves garlic, chopped 1 inch ginger, julienne 1 chilli, slit ½ onion, finely chopped ½ tsp turmeric 1 tsp chilli powder 1 tsp coriander powder ½ tsp salt 2 tomato, chopped 2 tbsp tomato sauce ½ tsp garam masala ¼ tsp pepper powder 2 tbsp coriander, finely chopped

In a pan, heat butter and add onion, beans, carrot, tomato, peas and baby corn. Add ½ tsp salt and stir fry on high flame for a minute. Also add all the capsicums and stir fry until the vegetables shrink slightly yet remain crunchy. Keep aside.

Heat oil and add cumin, kasuri methi, garlic, ginger and chilli. Saute until the spices turn aromatic. Now add onion and saute until onions turn golden brown. Keeping the flame on low, add turmeric, chilli powder, coriander powder and salt. Add tomatoes and saute until tomatoes turn mushy. Now add tomato sauce and mix well forming a saucy consistency.

Add in sauteed vegetables along with garam masala and pepper powder. Mix well keeping the flame on high. Finally, add coriander and enjoy veg jalfrezi with roti.
