Hailing from the Vidarbha region of Maharashtra, this spicy chicken curry can be eaten with jowar bhakris and rotis. Here is the simple yet delicious recipe for Varhadi Chicken you need to try.
500g chicken 1 onion, finely chopped ½ tsp red chilli powder 4 tbsp oil 2 cups water Salt, to taste For the green paste: 4 garlic cloves 1 ginger 3 green chillies 1 cup coriander leaves, chopped

For the spice paste: 1 onion, chopped 2 tbsp coconut, grated 1 tbsp coriander seeds 1 tbsp cumin seeds 4 cloves 10 black peppercorns 1 bay leaf 1 cinnamon stick 1 black cardamom 2 green cardamom

Place all the ingredients of the green paste in a mixer jar and blend into a fine paste with some water.
Heat oil and fry all the ingredients for the spice paste. Cool it down and grind into a coarse paste.

Heat the remaining oil in a wok, then add the onions and fry them until they turn brown.

Add the chicken, the two spice mixes, red chilli powder and salt. Mix well and saute for 10 minutes.

Add water and cook the curry until the chicken is done. Serve the Varhadi Chicken hot with bhakris.
