Over medium heat, bring the milk, heavy cream, and sugar to a simmer in a saucepan.
While swirling continually, add the heated milk mixture to the egg yolks that have been whisked separately.
Put everything back into the pot and simmer it on low heat until it thickens into a custard.
Turn off the heat and add the vanilla essence while stirring.
When the custard has cooled, pour it into an ice cream machine and churn it as directed.
Put the ice cream in an airtight container once it has reached a soft-serve consistency and freeze it for several hours to harden.
