Rajasthan has dal bati churma, Bihar has litti chokha, Gujarat has dhokla, and Uttar Pradesh has tehri. It is a bit more complex than pulao and easier than biryani to cook. Here is a recipe to try out.
2 cups rice 1/3 cup dice carrots, potatoes 1/3 cup diced capsicums, beans 1/3 cup diced bell peppers 1/3 sliced onions 1 tsp coriander powder ¼ tsp garam masala, turmeric 1 chopped green chilli 1 tsp cumin & mustard seeds 1 tsp grated ginger
Rinse and soak rice while you dice and slice vegetables.
Heat oil in a cooker, add mustard seeds, cumin seeds, green chillies, and ginger.
Saute onion for 30 seconds and add carrots, beans, and potatoes.
Add spices and roast them. You can now add bell peppers, spinach (optional), and capsicums.
Sprinkle a pinch of oregano, peri peri masala, and pav bhaja masala. This step is optional.
Pour rice and wait for 2 whistles. Serve the tehri with raita flaunting tempering of cumin seeds and red chilli powder.
