Nimona or matar nimona is a wintertime delicacy often prepared with fresh green peas and is especially popular in the eastern regions of Uttar Pradesh and the state of Bihar. Because fresh green peas are only available throughout the winter, this dish is only cooked during that season. Here's a recipe for you to try.

2 cups fresh green peas 2 peeled and cubed potatoes 2 tbsp ghee 1 tsp cumin seeds 1 finely chopped onion 2 finely chopped tomatoes 2-3 finely chopped green chillies 1 tsp ginger-garlic paste 1 tsp turmeric powder 1 tsp red chilli powder 1 tsp coriander powder 1 tsp garam masala Salt to taste Garnish: chopped cilantro

Heat oil/ghee, and add cumin seeds.

Sauté onions, green chillies, and ginger-garlic paste until golden.

Add tomatoes, and cook till soft.

Add turmeric, red chilli, coriander powder, garam masala, and salt.

Add potatoes, peas, water, and simmer until cooked.
