Juicy slices of grilled turkey take centre stage in this delicious club sandwich that makes for a great sharing platter between friends, or the ideal nap-inducing meal for one on the weekend.

600 grams U.S. Turkey breast 1 cup salt 1 cup granulated sugar 1 bay leaf 5 cups water

1 tomato, sliced 3 slices bread, toasted ¼ cup shredded lettuce 2 tablespoons mayonnaise 1 cup cooked turkey, sliced 1 teaspoon black pepper powder 2 cloves garlic, minced 5-6 slices pickles 4 slices crispy bacon Salt, to taste Potato chips, to serve

Add five cups of water to a large saucepan and add the salt, sugar and bay leaf.

Stir to get the sugar to start dissolving and bring the mixture to a boil.

Cool completely and submerge the turkey in the brine to let it rest overnight.

The next day, extract the turkey out of the brine and pat it dry thoroughly before drizzling some olive oil and seasoning with plenty of salt and pepper.

Heat up a grill pan until smoky and grill the turkey on all sides.

Transfer to a preheated oven at 73°C and cook the turkey breast for 40-45 minutes.

Remove from the oven and rest for 10-15 minutes before slicing thinly.

Combine the minced garlic and mayonnaise and spread over one side of the toasted bread slices.

Add shredded lettuce, sliced tomatoes, bacon and turkey to one slice before repeating the same sequence with another slice of bread on top.

Add the sliced pickles to the second layer and sprinkle a healthy amount of black pepper before placing the third slice of bread on top.

Cut into triangles and arrange on a platter and serve with potato chips on the side.
