Urrak is a traditional liquor made from fermented sugarcane juice or coconut sap, popular in the Indian state of Goa and other parts of South Asia. It has a distinctive sweet and sour flavour profile, with a slight hint of tanginess. Purists will say the only way to drink it is mixed with Limca, but this cocktail honours those flavours with a fresh twist.
