Khasta kachori in Uttar Pradesh is the primary choice for snacks with evening tea. Stuffed with a spiced mixture, these deep-fried bites are flaky and spicy, and complement the earthy notes of ginger in tea.
2 cups maida ½ cup ghee ½ tsp salt ½ cup water ½ tbsp ghee ghee/ oil for frying ½ tsp dry ginger, red chilli ¼ tsp turmeric 1 tsp fennel seeds 1 tsp mango powder ½ tsp cumin ½ cup moong dal
Soak moong dal and grind it into a coarse mixture with spices. Keep it aside.
In a bowl, knead maida, salt, and ghee together. Keep the dough aside to rest.
Take a small amount of dough and stuff it with the lentil mixture.
Flatten it with your hands and drop it in hot ghee.
Cook kachori until the crust is slightly brown and crispy.
Serve it with chutney and enjoy.
