A crunchy-fluffy sweet snack made with rice flour, jaggery and coconut, the uniyappam is Kerala’s sweet version of the savoury kuzhi paniyaram.

1.5 cups rice flour ½ cup whole wheat flour ½ cup chopped coconut ¾ cup jaggery 1 teaspoon cardamom powder 1 teaspoon toasted sesame seeds 2 ripe bananas 1 pinch baking soda 1 pinch salt Ghee, for frying

Add a couple of teaspoons of ghee to a pan and toast the chopped coconut until slightly browned before setting aside.

To the same pan, add the jaggery along with half a cup of water and allow it to dissolve completely.

Mash the bananas and add the remaining ingredients to the mixture, before pouring in the jaggery syrup and adding the toasted coconut.

Once the batter consistency is similar to idli batter, heat the ghee in an appe pan and pour spoonfuls of the batter into each concave.

Allow it to fry on a medium-high heat for 2-3 minutes before turning it over and allowing it to cook on the second side.

Remove from the pan once browned and cooked through and serve warm, with a cup of tea or coffee.
