On an episode of MasterChef India, he revealed his recipe for the perfect Pav Bhaji Masala. Follow along and you can make your own version of this popular Vikas Khanna approved street food snack.

5 dry roasted red chillies ¼ coriander seeds 6 cloves 1 tbsp cumin seeds ½ tsp fennel seeds 4 black cardamom pods 2 inch cinnamon stick 1 tsp turmeric 1 tsp raw mango powder (amchoor) ½ tsp black pepper 1 tsp kashmiri chilli powder 1 tsp black salt

Start by roasting off your dried chillies until they’re fragrant, then set them aside.

Next add all your whole spices to a pan and lightly roast until brown, be careful not to burn them.

Transfer the chillies and whole spices into a mixer jar and then add your powdered spices one by one.

Blend on short bursts until all the whole spices have been broken down and you have a finely powdered spice mix.
