Watermelon is considered a summer superfood. Comprising nearly 92% water content, the juicy fruit keeps one cool and hydrated. You can also whip up all kinds of delicious dishes using watermelon. Here’s an easy-to-make watermelon feta salad recipe to accompany your summer meals.
3 cups cubed seedless watermelon 1 cup medium cucumber, sliced 1 cup crumbled feta ½ cup thinly sliced red onion ½ cup coarsely sliced mint ¼ cup extra virgin olive oil 2 tablespoon red wine vinegar ½ tablespoon salt
Assemble the oil, vinegar, and salt in a bowl, and whisk them together to make the salad dressing.
In a separate larger bowl, blend the watermelon, feta, red onion, and mint.
Add the dressing from Step 1 to the ingredients in Step 2; toss them thoroughly to ensure their flavours merge and mix well.
Top the salad off with some extra mint to give it a stronger flavour and a refreshing kick. Enjoy!
