Many of us are also faced with the challenge of using up curry leaves before they wilt or dry – thus changing in flavour and being rendered useless. Attempt to store your herbs using this hack to see if it works.
Once the leaves are separated from their stems, a few are added into the craters of an ice tray.
Fill the trays with water and allow it to set in the freezer until it solidifies.
Unmould and transfer the curry leaf studded ice cubes to a Ziploc bag.
When ready to use, simply drop the ice cubes in a bowl of lukewarm water and use like you would in cooking.
