Packed with a variety of vegetables and flavored with a blend of spices, this curry is indulgent yet comforting. It’s ideal for those looking to serve something special yet light at festive dinners. The dish’s creamy texture comes from a base of yogurt and cream which pairs beautifully with the array of colorful veggies
– 1 cup potatoes, diced 1 cup carrots, diced 1 cup cauliflower florets 1 cup green beans, chopped 1/2 cup green peas 1/2 cup paneer cubes 1/2 cup yogurt 1 onion, finely chopped 1 tomato, pureed 2 tbsp ginger-garlic paste 1/4 cup cashews 2 tbsp cream (optional) – 1 tsp cumin seeds - 2 bay leaves - 1/4 tsp turmeric powder - 1 tsp red chili powder - 1 tsp coriander powder
Boil or steam the vegetables until they are tender but not mushy. Set them aside. Heat oil or ghee in a pan. Add cumin seeds and bay leaves, letting them splutter.
Add the chopped onions and sauté until golden brown. Stir in the ginger-garlic paste and cook until the raw aroma disappears.
Pour in the tomato puree and cook for a few minutes until it thickens. Add the cashew paste, yogurt and cream. Mix wel

Let the korma simmer for 5-7 minutes, allowing the flavors to meld together. Adjust salt as needed. Garnish with fresh coriander leaves. Serve hot with naan, paratha, or steamed rice.
