Indulge in the creamy goodness of vegan soy cheese crafted from soy milk. This simple recipe requires only three ingredients and promises a delightful dairy and nut free alternative for your culinary creations.
4 cups unsweetened soy milk ⅓ cup + 1 tbsp lemon juice, divided Salt to taste
In a large saucepan, combine the soy milk and ⅓ cup of lemon juice. Heat on medium-high until the mixture boils, and curdles rise to the top.
Prepare a sieve over a large bowl, lined with cheesecloth. Pour the curdled soy milk into the sieve to strain.
Let it cool for 10 minutes before gently squeezing out excess liquid.
Transfer the cooled soy milk curds to a food processor or high-speed blender. Add salt and the remaining 1 tbsp of lemon juice. Blend until smooth
Scrape the mixture into a glass container, cover with a lid, and refrigerate for at least 3 hours or overnight to chill and set.
