Alur Dum is a delicious potato curry from Bengal. It is served with Luchi (deep-fried puffed bread).
1 tsp turmeric powder 2 tbsp mustard oil 2 onions 2 tomatoes 1 tbsp ginger-garlic paste 2-3 green chillies 1 tsp cumin seeds 1 bay leaf 2-3 cardamom pods 1-2 cloves
1 small cinnamon stick 1 tsp turmeric powder 1 tsp red chilli powder 1 tsp cumin powder 1 tsp coriander powder 1 tsp garam masala powder 1 tsp sugar
Boil the potatoes and peel them. Heat the mustard oil in a pan. Add the potatoes, sprinkle with a little salt and turmeric powder, and fry them. Set aside.
In the same pan, add some more oil. Then add cumin seeds, bay leaf, cardamom pods, cloves, and cinnamon sticks. Add the chopped onions. Add ginger-garlic paste, and green chillies
Add tomatoes and cook until soft and add turmeric powder, red chilli powder, cumin powder, coriander powder, and salt.
Add the fried potatoes. Add enough water to cover them. Add sugar. Cover the pan and let it simmer for about 15-20 minutes.
Sprinkle the garam masala powder and garnish with coriander leaves.
