When it’s pouring outside, a comforting bowl of momo soup can immediately lift the spirit. Add homemade or store-bought momos to this delicious soup.
4 cups vegetable or chicken broth 1 onion 1 tomato 1 carrot 1 bell pepper 1 cup spinach 2 tbs soy sauce
1 tsp ginger-garlic paste 1 tbsp oil Fresh coriander leaves 1 tbsp lemon juice
Heat oil, add chopped onions and sauté until translucent. Add the ginger-garlic paste. Add chopped tomatoes, carrots, and bell pepper and cook until the vegetables are slightly tender.
Pour in the vegetable or chicken broth. Add soy sauce, salt, and pepper.
Bring to a boil, then reduce the heat and let the broth simmer for about 10 minutes.
Add the chopped spinach and simmer for 2-3 minutes until the greens are wilted. Stir in the lemon juice.
Place a few steamed momos in each serving bowl. Pour the hot soup over the momos. Garnish with fresh coriander leaves.
