Try This Quick Beetroot Pasta For A Healthy Meal

Beetroot Pasta is a full meal and can be both healthy and fun. It combines the earthy sweetness of beetroots with the comforting texture of pasta. The creamy, pink-hued sauce offers a unique twist on traditional pasta, making it visually appealing and deliciously satisfying.

Ingredients

250 gms pasta 2 medium-sized beetroots 1 onion 2-3 garlic cloves 1/4 cup heavy cream or coconut milk 1/4 cup grated Parmesan cheese 1 tbsp olive oil Salt and pepper Fresh basil or parsley

Step 2

Boil a large pot of salted water and cook the pasta. Drain and set aside.

Step 3

While the pasta is cooking, heat a tablespoon of olive oil in a pan, add the diced beetroot and cook for about 10-15 minutes.

Step 4

In the same pan, add the chopped onion and minced garlic and sauté. Add the cooked beetroot to the pan. Season with salt and pepper and cook for another 2-3 minutes.

Step 5

Transfer the beetroot mixture to a blender. Add the heavy cream or coconut milk and blend until smooth and creamy. Adjust the seasoning with more salt and pepper if needed.

Step 6

Add the beetroot sauce back to the pan and cook over low heat. Add the cooked pasta and toss to coat evenly with the sauce. Stir in the grated Parmesan cheese.

Step 7

Serve the beetroot pasta hot, garnished with fresh basil or parsley for a pop of freshness.
