If you love egg bhurji or paneer bhurji, you’ll be thrilled by this unique, vegan alternative: Besan Ki Bhurji! Made with chickpea flour and a blend of spices, this flavorful dish is nutritious, satisfying, and packed with Indian flavors.
1 cup besan 2 onions, 3 tomatoes, 1” ginger, 3-4 green chilies, 5-6 garlic cloves Coriander leaves, Salt to taste ½ tsp turmeric, 1 tsp red chili powder, ¼ tsp carom seeds, 1 tsp garam masala 1 tsp coriander powder, 1 tsp kasuri methi, 3 tbsp oil
Chop onions, tomatoes, and pound ginger, garlic, and chilies. Mix besan with carom seeds, salt, and water for a thick batter.
Sauté cumin, onions, ginger-garlic paste, then spices and tomatoes. Add water, bring to boil, drop besan mixture gradually.
Cook till done, add kasuri methi, garam masala, and coriander. Serve hot!
