Banana bread is a classic, comforting treat that's loved for its moist texture and rich banana flavor. Traditionally baked in an oven, this recipe adapts the process to a pressure cooker, making it quicker and easier while still delivering a delicious result. Using a pressure cooker to make banana bread allows the bread to steam as it cooks, which creates a tender crumb. Let's explore the recipe.

Ingredients

– 3 ripe bananas, mashed – 1/2 cup sugar (adjust to taste) – 1/4 cup melted butter or vegetable oil – 1/4 cup milk – 1 teaspoon vanilla extract – 2 eggs, lightly beaten – 1 1/2 cups all-purpose flour – 1 teaspoon baking soda – 1/2 teaspoon baking powder – 1/4 teaspoon salt – 1/2 teaspoon ground cinnamon (optional) – 1/2 cup chopped nuts or chocolate chips (optional)

Step 1

In a large mixing bowl, combine the mashed bananas, sugar, melted butter (or oil), milk, and vanilla extract. Stir until well blended. Add the eggs and mix until fully incorporated.

Step 2

In a separate bowl, whisk together the flour, baking soda, baking powder, salt, and cinnamon. Gradually add the dry ingredients to the wet mixture, stirring gently until just combined. If desired, fold in the chopped nuts or chocolate chips.

Pour 1 to 2 cups of water into the bottom of your pressure cooker. Place a trivet or a heat-safe rack in the cooker to keep the banana bread pan above the water.

Grease and flour a 6-inch round or 7-inch loaf pan that fits comfortably inside your pressure cooker. Pour the banana bread batter into the prepared pan, spreading it evenly. Cover the pan with aluminum foil to prevent water from dripping onto the batter.

Step 5

Place the pan on the trivet inside the pressure cooker. Secure the lid and set the pressure cooker to high pressure. Cook on high pressure for 40-45 minutes

Step 6

Once the cooking time is complete, allow the pressure to release naturally for 10 minutes, then perform a quick release to release any remaining pressure. Carefully remove the pan from the pressure cooker.

Step 7

Let the banana bread cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely. Slice and serve.
