If you're trying to stay away from oily or greasy recipes, try oil-free dishes which pack in the flavour. This oil-free herb chicken recipe is easy, delicious and also offers a depth of flavours. Plus, it is also healthy and pairable! Let's explore.
– 4 boneless, skinless chicken breasts – 2 cloves garlic, minced – 1 lemon (zested and juiced) – 1 teaspoon dried oregano – 1 teaspoon dried thyme – 1 teaspoon dried rosemary – 1 teaspoon dried basil – 1 teaspoon paprika – Salt and pepper to taste – 1/4 cup low-sodium chicken broth or water – Fresh parsley, chopped
In a small bowl, combine the minced garlic, lemon zest, lemon juice, oregano, thyme, rosemary, basil, paprika, salt, and pepper. Mix well to create a flavorful herb marinade. Place the chicken breasts in a large resealable plastic bag or a shallow dish.

Pour the herb marinade over the chicken, ensuring that each breast is evenly coated. Seal the bag or cover the dish, and refrigerate for at least 30 minutes to allow the flavors to infuse the chicken. For best results, marinate for 2-4 hours.

Arrange the marinated chicken breasts in a single layer in a baking dish. Pour the low-sodium chicken broth or water into the dish to keep the chicken moist during baking.

Cover the baking dish with aluminum foil to prevent the chicken from drying out. Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).

Once the chicken is cooked, remove it from the oven and let it rest for 5 minutes before serving. Garnish the chicken with freshly chopped parsley before serving for an added burst of color and freshness.
