1 cup heavy cream 1 cup mascarpone cheese ½ cup sugar 1½ tsp vanilla extract 2 tbsp brandy 2 cups espresso 1 pack of ladyfinger biscuits 3 tbsp cocoa powder
In a large mixing bowl add the heavy cream, sugar, and vanilla extract and whisk them till stiff peaks form.
Add the mascarpone cheese to it and whisk them together till fully incorporated.
In a bowl pour in the espresso and the brandy and dip the ladyfingers in for 3-4 seconds before placing them in a freezer-safe glass container.
After the first layer of ladyfingers, spread the cheese and cream mixture evenly before repeating with the rest of the soaked ladyfingers.
Generously dust the top of the tiramisu with cocoa powder and chill in the refrigerator for 5-6 hours or overnight.
The extended time in the fridge helps the flavours to come through much better. Cut it into squares and enjoy it with your friends and family.
