Mixed nuts chutney is a delightful twist on the traditional chutney recipes, bringing together the rich, nutty flavors of assorted nuts with the tanginess of spices and herbs. It’s an incredibly versatile condiment that pairs perfectly with dosas, idlis, parathas, or even as a dip with snacks. The combination of different nuts not only adds a unique taste but also provides a healthy boost of nutrients and proteins, making it a great option for those looking to add some crunch and flavor to their meals.

Ingredients

– ¼ cup peanuts – ¼ cup cashews – 2 tablespoons almonds – 2 tablespoons walnuts – 2 tablespoons sesame seeds – 1 tablespoon grated coconut (optional, for added flavor) – 1-2 green chilies, chopped – 1 small onion, chopped – 2-3 cloves garlic – 1 small piece of ginger – 1 teaspoon cumin seeds

Step 1

Heat a pan on medium flame and dry roast the peanuts, cashews, almonds, and walnuts until they turn light golden and aromatic. Set them aside to cool. In the same pan, dry roast the sesame seeds for 2-3 minutes until they start to pop. Add the grated coconut and roast for another minute (if using). Set aside.

Step 2

Heat a tablespoon of oil in the pan and add chopped onions, garlic, ginger, and green chilies. Sauté until the onions become soft and translucent. In a blender, add the roasted nuts, sesame seeds, sautéed onion mixture, tamarind paste, cumin seeds, and salt

Step 3

Add a little water and blend until you achieve a smooth, thick consistency. Adjust the water and salt as needed. Heat 1 tablespoon of oil in a small pan, add mustard seeds, and let them splutter. Add urad dal, curry leaves, and dried red chilies. Fry until the dal turns golden.
