Try This Maharashtrian Recipe To Do More With Spring Onions

Usually just used as a garnish, spring onions actually pack a very unique flavour profile.  This Maharashtrian sabzi uses them to their fullest.

Ingredients

3 bunch spring onion stalks 3 tbsp oil 1 tsp cumin seeds (jeera) 2 tbsps chopped garlic ½-1 small green chilli chopped ¾ tsp salt 1 tsp red chilli powder ½ tsp turmeric powder (haldi) 4 tbsp gram flour (besan)

Step 1

Wash, dry and chop up your spring onions. Dry roast the cumin seeds until fragrant, add the garlic and let it brown slightly before adding the chilli.

Step 2

Add the spring onion whites, along with ¾ tsp salt. Saute for 3-4 minutes till the onions soften. Add in 1 tsp red chilli powder and ½ tsp turmeric powder. Then add in the spring onion greens, mix them in, and saute for 3-4 minutes, till they cook down a bit.

Step 3

Finally, add about 4 tbsps of gram flour (besan), and mix it in. Cover and cook for 5 minutes. Serve hot with rice or chapatis.
