Ingredients

– 1/2 cup whole wheat flour or oat flour – 1/2 cup low-fat milk (or almond milk for a dairy-free option) – 1 egg (or 1/4 cup unsweetened applesauce for a vegan alternative) – 1/2 teaspoon baking powder – 1 tablespoon stevia or another low-calorie sweetener – 1 teaspoon vanilla extract – A pinch of salt – Cooking spray or a small amount of coconut oil for frying

Step 1

In a bowl, mix together the flour, baking powder, sweetener, and salt. In a separate bowl, whisk together the egg, milk, and vanilla extract until smooth.

Step 2

Combine the wet and dry ingredients, stirring until just combined. Be careful not to over-mix. Heat a non-stick pan over medium heat and lightly coat with cooking spray or a little coconut oil.

Step 3

Pour 1/4 cup of the batter onto the pan for each pancake. Cook until bubbles form on the surface, then flip and cook the other side until golden brown.

Step 4

Serve warm with your choice of fresh fruits, light syrup, or a sprinkle of cinnamon for an extra touch of flavor.
