Mayonnaise is traditionally made from eggs, but if you want to try a lighter egg-free version, this recipe is perfect for you. Easy to make and with very few ingredients, you can whip up a batch of fresh mayo at home and add any additional herbs and flavours you like!
Ingredients: 1 cup milk 1 cup vegetable oil 1 tablespoon lemon juice 1 tablespoon white vinegar 2 cloves garlic, minced 1 teaspoon dijon mustard 1/2 teaspoon salt 1/4 teaspoon black pepper 1/4 teaspoon sugar
In a blender, combine milk, lemon juice, vinegar, garlic, mustard, salt, pepper, and sugar. Blend on low speed until well combined.
Slowly drizzle in the vegetable oil while continuing to blend. Increase blender speed and blend until the mixture thickens.
Taste and adjust seasoning if needed. If the consistency is too thin, add more oil and blend again.
Transfer the mayo to a jar or container. Refrigerate for at least 1 hour to allow flavors to meld before using.
