Jim Jam was one of the most loved biscuits of every' 90s-born kid, and here is a twisty version of this favourite biscuit. This dessert is super easy to make and will make everyone nostalgic.
For the Base: 50 Jim Jam biscuits 130g unsalted butter 375g whipping cream 600g Philadelphia cream cheese 100g caster sugar 2 tbsp cream from Jim Jam biscuits ½ tsp vanilla bean paste 1 tsp lemon zest For the Jelly 1L water 2 packs of jelly premix crystals
Crush the Jim Jam biscuits' bottom layers to a coarse consistency.
Mix the crushed biscuits with melted butter and press into a butter-paper-lined cheesecake mould.
Whip the cream until stiff peaks form.
Combine cream cheese, caster sugar, and the cream from the biscuits. Whip until smooth; add vanilla bean paste and lemon zest.
Boil 1 litre of water, add jelly crystals, and boil for 1 minute.
Pour half of the cream cheese mixture onto the base; set for 15 minutes.
Pour the jelly mixture over the cream cheese layer; let it set completely.
Pipe the remaining cream cheese mixture on top, smooth it, and garnish with the top layers of the biscuits.
