Jeeravan is a blend of spices and has its roots in Indore, Madhya Pradesh. In fact, the popular Indori Poha is flavoured by this unique masala. Here’s the easy recipe you need to make Jeeravan at home.
3 tbsp dried mango powder ½ tsp dry ginger powder 2 mace 1 nutmeg 4-5 cloves 1 bay leaf 1 inch cinnamon stick 2-4 cardamoms 6 dried red chillies 1 tbsp cumin seeds 1 tbsp coriander seeds 1 tbsp fennel seeds ½ tbsp caraway seeds ½ tbsp asafoetida ½ tbsp black salt 1/3 tbsp turmeric powder
Place all the ingredients in a pan and dry roast them for 2-3 minutes or until they release their aroma.
Let the spices cool down completely, then transfer them into a grinding jar.
Grind the spices into a smooth, fine powder. No water is required.
Transfer the ground spice blend into an airtight container.
Store the Jeeravan masala in a cool, dry place and use as and when needed.
