Traditional uttapam recipes with fermented rice batter might take a lot of time to make from scratch. But with suji in your arsenal, you can prepare delicious and crunchy uttapam from scratch in just 30 minutes.
1 cup suji/rava, coarse ½ cup curd Salt to taste ½ cup water 1 onion, finely chopped ½ capsicum, finely chopped 1 carrot, grated 1 tomato, finely chopped 2 t coriander, finely chopped 1 inch ginger, finely chopped 1 tablespoon finely chopped chillies Few curry leaves, chopped
Take suji, curd, and salt in a bowl and mix well. Add water to create batter consistency. Let it rest for 20 minutes.
Prepare vegetable toppings with onion, capsicum, carrot, tomato, coriander, green chilli, ginger, curry leaves, and some salt. Mix well.
Once suji is well soaked, give it a stir, then ladle on a heated non-stick pan. As the bottom starts to firm up, add the toppings and press it gently.
Add some oil to the bottom, and once crispy, flip the uttapam. Add some more oil to make it crispy.
Make the rest of the uttapams and serve with coconut chutney.
