This instant dhokla is perfect for busy mornings.
For Batter: 1½ cup besan, 3 tbsp semolina, ½ tsp ginger paste, 2 chilli (finely chopped), ¼ tsp turmeric, 1 tsp sugar, a pinch of asafoetida, ½ tsp salt, 1 tbsp lemon juice, 1 tbsp oil, 1 cup water, ½ fruit salt For Tempering: 3 tsp oil, ½ tsp mustard seeds, ½ tsp cumin, 1 tsp sesame, a pinch of asafoetida, a few curry leaves, 2 chilli, ¼ cup water, 1 tsp sugar, ¼ tsp salt, 1 tsp lemon juice
In a large bowl sieve, besan and semolina then add all the ingredients for batter except fruit salt.
Prepare a smooth batter and add fruit salt.
Immediately transfer the batter to the dhokla stand and steam for 20 minutes.
Heat oil in a pan and add all the ingredients for tempering.
Pour the tempering on the dhokla and cut into the desired shape and serve with any kind of chutney.
