For Navratri bhog or festive spread, aloo-tamatar sabzi is the go-to recipe. It can be prepared without onion and garlic and tastes absolutely lip-smacking. Pair it with steamed rice, jeera rice, or matar pulao for a comforting experience.
2 diced potatoes 1.5 pureed tomatoes 1 chopped green chilli ½ tsp turmeric powder 1 tsp coriander powder ½ tsp cumin seeds ¼ tsp red chilli powder ½ tsp garam masala Salt to taste 1 tbsp oil or ghee Water as needed 2 tbsp coriander leaves
Wash potatoes thoroughly. Peel them and dice them in large chunks.
Heat oil in a pressure cooker and add cumin seeds and turmeric powder.
After sauteing for 30 seconds, add green chillies. Stir for a minute before adding tomato puree.
Add spices to the pressure cooker and roast them until they release the oil.
Add potatoes, at least 2 cups of water, and salt to taste, and put on the lid of the cooker.
After 2 whistles turn off the flame. Open the cooker when it has cooled off and garnish the aloo-tamatar sabzi with coriander leaves.
