In summer, you need recipes that take less time to prepare so that you don’t have to spend a lot of time in a hot environment. Uttapam is one of the dishes that is lightweight and can be enjoyed for breakfast, lunch, and dinner. Here is a quick recipe to follow.
177 gm rava 1/2 cup Water 1/2 cup Yogurt 1/2 cup Salt 1 tablespoon oil butter or ghee 1 tablespoon vegetables of your choice
In a bowl, mix rava and curd. Curd will make the uttapam soft and spongy.
Toss chopped vegetables of your choice, like carrots, cabbage, onions, tomatoes, etc., in a bowl.
Add spices to the vegetables and batter to add more flavour to the uttapam.
Allow the batter to rest for at least 20 minutes before you start pouring it on a hot skillet. Add ENO or baking soda to it.
Heat a pan and add a ladle full of batter on it. Top it with vegetables.
Cook both sides of the uttapam and serve it hot with ketchup or chutney of your choice.
