4-5 large bell peppers 1 tbsp olive oil Chopped garlic Cooked quinoa 1 finely chopped onion 1 finely chopped tomato 1/2 cup diced black olives Salt as required 1 tbsp oregano pepper powder
Cut small slices off the top and bottom of the peppers. Make them stand and clear the seeds from inside.
In a pan, heat up olive oil and add sliced onions, tomatoes, garlic and peppers. Cook for 3-4 mins.
Add the quinoa and all the powdered spices. Let it cook for another 5-6 minutes. Now, fill the peppers up with this stuffing.
Put the capsicums on a baking tray and brush with olive oil. Bake at 375 F for 30 mins. Serve hot and enjoy!
